Golden Mint Fizz
Nothing says summer like the smell of fresh mint, lemons & lime!
Keeping things summery AND healthy, I’m taking a leaf out of my Mum’s books and using our beautiful Gold Spice honey and fizzing up summer!
We’re going to be using a combination of sugar syrup and our Gold Spice honey for the sweetness.
(Makes about 8 mocktails.)
THE SYRUP
Lemon & Lime Juice 1 cup
Gold Spice Honey 4 tbsps
Raw sugar 1 cup
Water 1 cup
TO SERVE
Sparkling or still water 6 cups
Lots of crushed ice
Lots of crushed mint
In a saucepan, bring the sugar and water to a rolling boil till the sugar has completely dissolved.
When cooled sufficiently, but still warm, add the honey and stir in the Gold Spice honey.
Pour the lemon & lime juice.
Mix well.
You could bottle this syrup and keep refrigerated for up to a week.
TO SERVE:
Put in lots of crushed ice in a glass.
Pour the syrup and crushed mint.
Add sparkling or still water to taste.
(I’m quite partial to gin in mine ;))
