
There’s nothing quite like following a trend and we’re not averse to it! Thanks to the lovely Kirsty who told me how she makes her version of this salad. Soooo… heregoes:
Cucumber – 1 whole.
Sliced lengthwise in half, smashed with the blunt edge of your biggest knife and then chopped coarsely into chunks.
Pics Smoochy Peanut Butter 1 tbsp
Hot Stuff Curry Oil 2 tbsp
Coconut Cream 2 tbsp (ish)
Vinegar – a splash.
In a large container with a lid, toss all the ingredients together.
Close the lid and give it a really good shake making sure that all the cucumber is well coated.
Serve with the crunchy & moreish Sago fritters, or just with some grilled lamb.
