
In our family, all of us girls LOVE soup in all its forms – smooth & creamy, clear with dumplings, rustic with hearty vegetables and anything else you could think of. Crusty bread to dunk in or croutons for crunch. We think it’s a meal in a bowl. The husband, however, only considers it to be a starter or a first course!
Here’s the quickest & easiest classic, an all time family favourite.
PUMPKIN & KUMARA SOUP
Pumpkin Peeled & Diced 2 cups
Kumara Peeled & Diced 1 large
Onion Chopped 1 medium
Garlic 3-4 cloves
Hurry Curry Spice Blend 2 tsp
Stock 6 cups
Neutral Oil – generous splash
In a heavy bottomed pan, heat the oil.
Add the onions and cook till transparent.
When the onions look “soggy”, add the chopped / crushed garlic and stir well. Saute for a couple of minutes till the garlic loses its “garlicky” pungency.
Add the Hurry Curry and stir.
Put the pumpkin & Kumara and stir till well coated with the paste.
Cover and let sit for about 5 minutes on a medium heat.
Add the stock and bring to a rolling boil.
Simmer till the vegetables are nearly done.
Use a stick blender to blitz till smooth.
Taste and check for seasoning.
Serve with a dollop of sour cream, croutons and a swirl of Hot Stuff Curry oil.
