A lovely, cooling side, perfect to pair with tortillas and wraps or with spicy curries and rice. Or even a great accompaniment on a cheese & cracker board!
CUCUMBER & MINT RAITA
Serves 6 as a side

Cooking Difficulty: Super Easy
Plain, unsweetened yoghurt 2 cups
Grated Cucumber 1 cup
Lemon Juice – 1 tbsp
(About 1/2 lemon)
Mint leaves – small handful
(Chopped fine. Leave a small sprig to use as garnish)
Salt 1/4 tsp
Pepper – a pinch
Mix all the ingredients well.
Top with the sprig of the mint and leave to chill in the fridge till ready to serve.
