COMFORT EATING SEAFOOD
Seafood is comfort eating at any time of the year! In the summer, it is perfect with fresh salads, and in the winter, loaded on top of buttery, garlic bread! *drooool*
This one here is a very quick throw together recipe that kinda comes together. You may want to tweak quantities and ratios to your preferences.
Mixed Seafood 300 gm
(we often use this.)
Fish Mix Spice Blend 1 heaped tbsp
Melted Butter 50 gms
Crushed Garlic 1 tsp
Paprika 1/4 tsp
Chopped Parsley – generous handful
Sliced Lemons 4-5 slices
Melt the butter and mix everything, except for the seafood.
If using frozen seafood, thaw out and drain the water. Pat dry.
Mix the seafood in and stir gently with a wooden spoon till everything is well coated with the spicy, buttery, garlicky mixture. (it smells incredible!)
Heat a heavy skillet till hot (but not burning). Test by putting a few drops of water and if they hiss and evaporate, your pan is ready to use.
Put the buttery, seafood mixture and cook on a medium to high heat, turning the pieces after about 3-4 minutes to ensure that everything cooks through.
The seafood will shed their own juices and mingle with the butter & lemon juice.
Serve on a bed of a rocket & pear salad with lots of lemon slices, or with thick hunks of garlic bread.
