My husband jokes that I kinda add this to every menu when I am taking a cooking class. And he isn’t too far from the truth! These are a staple in our fridge. We have a huge jar and find that these make their way onto cheese platters, in sandwiches, on top of salads, sitting pretty on our tacos and salsas, and of course – along with our curries! They don’t just look pretty, they pack a punch in flavour and texture. AND they are super duper easy to make!
PICKLED ONIONS
Serves 4 as a side
Prep time: 10 mins / Cooking Time: None
Cooking Difficulty: Easy
Red Onion 1 medium
White Vinegar 1/4 cup
Salt 1/2 tsp
Castor sugar 1/4 tsp
Slice onions as finely as you possibly can.
Add the salt, vinegar and sugar.
Mix till the onions are well coated.
THAT’S IT!!!
