										<content:encoded><![CDATA[<p>When I was 11 or 12, my Nani &amp; Nana (Maternal grandparents) visited us and were absolutely mortified that I couldn’t cook at all! This was quickly rectified and I was taught how to make the base of a basic, cooked everyday Punjabi curry sauce. This curry here is a slightly tweaked version and made a wee bit more decadent by the addition of the cashews.</p>
<p>Use it with any protein on hand &#8211; or even as a dip or on pizza and other flatbread for a complete flavour boost.</p>
<p>BETTER THAN RESTAURANT CURRY</p>
<p>Serves 6 as a main / A medium spiced curry<br />
Prep time: 15 mins / Cooking Time: 20 mins<br />
Difficulty: Easy</p>
<p>Protein of choice 1.5 kg<br />
Mixed Roots Meat Mix 1 tsp<br />
Plain, unsweetened yoghurt 2 tbsp</p>
<p>FOR THE CURRY<br />
Neutral Oil* 4 tbsps<br />
(Or Ghee and oil in equal portions)<br />
Large onion (chopped) 1<br />
Crushed garlic 1 tsp<br />
Crushed or grated ginger 1 tsp<br />
Crushed Tomatoes 400 gms -1 can<br />
Coriander (small handful &#8211; stalks and leaves separated)<br />
<a href="https://mixedroots.co.nz/product/hurry-curry/" target="_blank" rel="noopener">Mixed Roots Hurry Curry Spice Blend</a> 2 tsp<br />
<a href="https://mixedroots.co.nz/product/the-meat-mix-spice-blend/" target="_blank" rel="noopener">Mixed Roots Meat Mix 1 tsp</a><br />
Cashew Nuts &#8211; about 8<br />
Garam Masala 1/4 tsp<br />
Salt to taste<br />
Splash of water</p>
<p>&#8211; Cut your protein into bite sized pieces.<br />
&#8211; In a bowl, mix with the plain yoghurt and Meat Mix.<br />
&#8211; Cover &amp; set aside.<br />
(You could also do this and leave overnight, covered in the fridge. Just pull it out and try &amp; bring as close to room temperature as possible, before cooking.)</p>
<p>COOKING THE CURRY</p>
<p>&#8211; In a heavy bottomed pan, heat oil &amp; ghee on a medium-high heat.<br />
&#8211; Add chopped onion and cook till transparent.<br />
&#8211; The garlic goes in next. Mix well and cook till you can’t smell raw garlic or onions.<br />
&#8211; To this add the crushed tomatoes and Mixed Roots <a href="https://mixedroots.co.nz/product/hurry-curry/" target="_blank" rel="noopener">Hurry Curry</a> &amp; <a href="https://mixedroots.co.nz/product/the-meat-mix-spice-blend/" target="_blank" rel="noopener">Meat Mix</a> Spice Blends, along with half the chopped coriander, ginger and cashew nuts.<br />
&#8211; Mix well. Keep on a medium heat. Stirring occasionally.<br />
&#8211; When the curry paste comes together it turns into this beautiful rich, terracotta colour, with the tomatoes shedding their oil towards the edges.<br />
&#8211; Add a splash of water and heat through.<br />
&#8211; Using a stick blender, crush the cashews and sauce into a smooth paste.<br />
&#8211; Drop the marinated meat into the sauce and stir well.<br />
&#8211; Cover and let simmer till the meat is cooked.<br />
&#8211; Sprinkle the remainder of the chopped coriander along with the Garam Masala, cover and leave aside till ready to be served.</p>
<p>Serve with steamed rice, fresh roti or naan, a dollop of plain yoghurt and some poppadom &amp; pickled red onions.</p>
<p>This makes a thick, rich sauce. If you want a creamy base, add a dash of water, coconut cream, or cream to bring to the consistency you would like it to be.</p>

										<content:encoded><![CDATA[<p>One of my all time favourite Indian desserts is “Phirni” a lovely pudding made with rice that has been soaked and then ground very finely and then slowly cooked with milk, sugar and fragrant spice. I, of course, never have the patience or forethought to plan and then cook accordingly. Or even get the rice fine enough so that it doesn’t feel gritty when eaten.</p>
<p>I thought this was the most magical compromise that I probably enjoyed even more than the original!</p>
<p>This is a HUGE portion and will make a hearty portion for 6-8 eager adults.</p>
<p>INGREDIENTS<br />
Rice Flour 6 heaped tbsps<br />
Almond Meal* 2 heaped tbsps<br />
Ghee / Butter 1/2 cup, about 125 gms<br />
Cardamom Powder 1 tbsp<br />
Vanilla Ice Cream 1 2 liter tub</p>
<p>METHOD<br />
&#8211; In a heavy bottomed pan, melt the ghee or butter on a medium heat.<br />
&#8211; Add the rice flour along with the almond meal and cook till the flour is a very light brown (take care as you don’t want the flour to burn).<br />
&#8211; The cardamom powder goes next. Mix well.<br />
&#8211; Scoop about a quarter of the tub of the vanilla ice cream and while it’s melting, keep an eye out for any lumps. You might need to use a whisk if you spot any.<br />
&#8211; Add the rest of the ice cream and let slowly melt.<br />
&#8211; Keep the heat relatively low and heat this decadent mixture right through while stirring occasionally to ensure that the flour doesn&#8217;t stick to the bottom.<br />
&#8211; Pour into individual ramekins or containers and sprinkle a bit of cardamom. Other garnish options &#8211; crushed pistachios, slivered almonds or edible roses &amp; flowers.<br />
&#8211; You could also leave to rest in a wide dish and scoop out individual portions while serving.</p>
<p>Delicious hot or cold!</p>
<p>*Use an additional spoonful of rice flour if you have nut allergies.</p>

I absolutely adored these croquettes! They served them using a Masala Mayo &#8211; just stir through some <a href="https://mixedroots.co.nz/product/hurry-curry/" target="_blank" rel="noopener">Hurry Curry</a> into a good quality mayonnaise. Or stick to your tartare sauce <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f609.png" alt="😉" class="wp-smiley" style="height: 1em; max-height: 1em;" /> </span></p>
<p><span data-tt="{}">If you wanted to make a meal of them, I’d serve them with a nice warm lentil salad, pickled red onions and some crunchy slaw.</span></p>

<li><span class="a_GcMg font-feature-liga-off font-feature-clig-off font-feature-calt-off text-decoration-none text-strikethrough-none">Chopped coriander</span></li>
<li><span class="a_GcMg font-feature-liga-off font-feature-clig-off font-feature-calt-off text-decoration-none text-strikethrough-none">Texican Spice Blend</span></li>
<li><span class="a_GcMg font-feature-liga-off font-feature-clig-off font-feature-calt-off text-decoration-none text-strikethrough-none">Egg (if using)</span></li>
<li><span class="a_GcMg font-feature-liga-off font-feature-clig-off font-feature-calt-off text-decoration-none text-strikethrough-none">Mix gently until just combined.</span></li>
<li><span class="a_GcMg font-feature-liga-off font-feature-clig-off font-feature-calt-off text-decoration-none text-strikethrough-none">Divide into 4 equal portions and roll into loose balls.</span></li>

<ul>
<li><span class="a_GcMg font-feature-liga-off font-feature-clig-off font-feature-calt-off text-decoration-none text-strikethrough-none">Heat a large cast-iron pan or get the Barbie up to optimal temperature (Very hot!)</span></li>
<li><span class="a_GcMg font-feature-liga-off font-feature-clig-off font-feature-calt-off text-decoration-none text-strikethrough-none">Spray some oil onto pan or grill and maybe even some on the Mince balls!</span></li>
<li><span class="a_GcMg font-feature-liga-off font-feature-clig-off font-feature-calt-off text-decoration-none text-strikethrough-none">Place a mince ball onto the hot surface and immediately smash firmly with a burger press or spatula until about 1cm thick.</span></li>
<li><span class="a_GcMg font-feature-liga-off font-feature-clig-off font-feature-calt-off text-decoration-none text-strikethrough-none">Cook for 3 &#8211; 4 minutes until nicely caramelised, then flip and cook another 2–3 minutes.</span></li>
</ul>

(Depending on my mood, I sometimes I add a splash of fish sauce as well!)</span></li>

										<content:encoded><![CDATA[<p>Easy, flavourful meals with a pop of colour are a great favourite in our family.</p>
<p>This chicken also tastes wonderful the next day, cold &amp; shredded on a bed of salad.</p>
<p>Serves: 4 | Prep Time: 15 mins | Cook Time: 45–50 mins<br />
Ingredients:<br />
8 chicken drumsticks<br />
2 tbsp <a href="https://mixedroots.co.nz/product/bee-sting-honey-drizzle/" target="_blank" rel="noopener">Bee Sting Honey Drizzle</a><br />
1 heaped tsp <a href="https://mixedroots.co.nz/product/nice-spice/" target="_blank" rel="noopener">Nice Spice</a><br />
2 tbsp neutral oil<br />
½ tsp chill flakes (optional)<br />
3 garlic cloves, smashed coarsely<br />
Salt &amp; pepper to taste</p>
<p> Marinade:<br />
Mix together:<br />
2 tbsp <a href="https://mixedroots.co.nz/product/bee-sting-honey-drizzle/" target="_blank" rel="noopener">Bee Sting Honey Drizzle</a><br />
1 tsp <a href="https://mixedroots.co.nz/product/nice-spice/" target="_blank" rel="noopener">Nice Spice</a>,  2 tbsp oil , salt &amp; pepper to taste<br />
Toss chicken in marinade. Let sit 10–30 mins.</p>
<p> Method:<br />
Heat the oil in a heavy bottomed pan.<br />
Add the marinated chicken, crushed garlic, chilli flakes (if using) and pour over remaining marinade.<br />
On a medium heat, cover the chicken and cook for about 20 minutes. Turn chicken and baste with pan juices. Cover and cook another 15 minutes.<br />
Drizzle 1 more tbsp <a href="https://mixedroots.co.nz/product/bee-sting-honey-drizzle/" target="_blank" rel="noopener">Bee Sting Honey Drizzle</a> and shake the chicken in the pan, feeling like an accomplished chef!<br />
Serve garnished with the fennel fronds &amp; leaves from the bulb or fresh thyme &amp; rosemary sprigs.</p>
<p>We had this with some Jasmine rice and steamed pak-choy and Brocollini stems. Crispy shallots are a great addition, too.</p>
